Momoni (Stock Fish)

• In Ghanaian recipes, momoni is often roasted or fried in some oil before incorporating into the other ingredients for a fortified, fishy sauce. 
• It can be added to stews, soups, and sauces to eat with rice dishes along with ground red pepper, tomato, and onion. Starchy foods like rice, potatoes, yams, etc., go well with the salty, flavorful momoni.
