Momoni (Salted fish) per LB

• Fermented fish also known locally as Momone  is produced in Ghana from various species of fish and also from squid and octopus.
• The fish is carved, washed, rubbed with salt and packed in barrel layers, alternating with layers of salt.
• After fermentation for 7 days, the fish is dried in the sun.
